Making Homemade Fig Preserves

Learn how to preserve your late-summer fig harvest through water-bath canning with Food Safety and Quality Extension Agent Emily Ferko. Participants will leave with a delicious jar of fresh fig-strawberry preserves.

Growers have cultivated and enjoyed the edible fig (Ficus carica), native to the Mediterranean, for centuries. In Central Alabama, fig season extends from July through September. Because figs ripen on the tree and spoil quickly, this is the perfect time to preserve their fruity goodness! *Supply fee included.

About the Instructor

Emily Ferko

Emily Ferko is a Food Safety and Quality Specialist with over 14 years of experience in private industry and state regulatory. Emily has spent the past 9 years as a Quality Manager in multiple food manufacturing settings ensuring compliance with Global Food Safety Initiatives, including interpretation of standards and regulatory requirements and producing specialized training for all levels of employees. With the Alabama Cooperative Extension Service, Emily provides training in ServSafe, Cottage Food Law, and preservation techniques.

Cancellation & Refund Policy

Refunds (minus a $15 processing fee) will be given for Friends of Birmingham Botanical Gardens programs priced at $25 or more if notification is made at least 10 business days prior to class start date. (You are always welcome to send another person under your registration if you cannot attend.) Transfers may be made to programs of equal value at no additional fee. We reserve the right to cancel classes due to lack of participation or other unforeseen circumstances. Please note that programs are held rain or shine; in extreme weather conditions, programs may be canceled for your safety and the safety of staff and volunteers. If we cancel a program for any of these reasons, we will issue a full refund.
